Hello everyone! My name is Kai and I am from Medford, Wisconsin. I just started making cakes about 1 1/2 years ago, I really enjoy making MMF cakes. ;o) I am self taught so I look forward to learning tips and skills from all of you!!! you all are so talented. I am a stay at home mother and started making cakes to save us money and am now doing it as a side business!(legally allowed-to reassure everyone ;) I try me best to make sure every aspect of my cakes are edible. My Bonnet and Hatbox cake is a 14" two layer white cake with rasberry filling covered in Fondant. The pearls were made using a silicone mold dusted with pearl dust. Between fondant strips is Scroll work done with royal icing, the flowers were made of gumpaste and hand formed then lightly sprayed with color. I am new to the Knoxville area and wanted to let everyone know that I have Wilton classes at Michaels on Kingston Pike in Knoxville, TN.

Icing Sheets in the Winter! In the winter time, as it gets colder, any brand of icing sheet tends to dry out. Some brands dry out quicker than others. I was wondering if anyone is purchasing petal dust to use on their gumpaste flowers, the price for the petal dust is so high and you get a very small amount. When I do number cakes, I bake cakes in 1/2 sheet pans and usually do two layers and carve the number out of the sheet cakes. Just mak sure your cakes are slightly frozen before carving. You can use the leftover cake to make mini cakes or cake pops. I hope this helps.

I have to create a cake for a lady's 100th birthday. Her daughter wants 3 cakes which represent the numbers, "100" and it needs to serve about 75 people. I have two choices, bake cakes and put them together somehow, or bake cupcakes, line them up so they look like the numbers and frost them all together.
