If you are looking for truly comprehensive fondant class but don't have the time or money to attend one, you'll be pleasantly surprised how much you can learn from taking Marsha Winbeckler’s Fondant Ruffles, Pleats, and Drapes class offered by Craftsy.
Not only does Marsha cover numerous techniques for creating ruffles, pleats, drapes, she shows you how to do them with several different types of tools so you can work with what you have. If you were to attend this class, the material would surely cover 5 days. At Craftsy, you are able to watch the portions of the video you want, repeat them and refer back to them again. You can also post questions to Marsha about the technique and receive responses.
Her ruffle demonstration is very thorough, covering steps for preparing the fondant to use in a pasta machine to rolling it thinly and cutting the fondant to avoid rips and cracks. She shows you how to stack folded ruffles to create a cascade, roll a ruffle puff, create ruffles created by thinning the edges using different tools and creating different effects. She shows you how to apply ruffles with a scalloped edge and ruffled ribbons and finishes off a cake with a ruffled flower. No matter which tools you own or are most comfortable using, Marsha shows you how to use them in different ways to create different effects.
Learn to make box pleats and a variety of different types of pleats on the side of a cake and covering an entire cake.
The videos are high quality and Marsha is a true professional. This class will not disappoint!

Thanks for the info, Gali. I've found a lot of cake "how to's" on youtube, but I have not seen the one(s) on pleating fondant. I will give it a look.
