Hi there!

Hello everyone! My name is Kai and I am from Medford, Wisconsin. I just started making cakes about 1 1/2 years ago, I really enjoy making MMF cakes. ;o) I am self taught so I look forward to learning tips and skills from all of you!!! you all are so talented. Humidity

Oh I know I go on about this, but if anything is going to get my goat (or four legged animal of your choice) it's humidity.

I can can cope with the odd breakage, a cake that didn't rise right, colour on my hands, spilling glitter everywhere, but these things are controllable, but humidity is the one thing that I have little hope…

ME!

I am a stay at home mother and started making cakes to save us money and am now doing it as a side business!(legally allowed-to reassure everyone ;) I try me best to make sure every aspect of my cakes are edible. I only use homemade marshmallow fondant and when cake is not possible I usually turn to rice cereal treats covered in chocolate for stability-such as my XBOX controllers and buck head. Tic Tic Toc It's 2011

This is a Chocolate fudge Cake.Butter cream Icing & Fondant.

Bonnet on Hatbox

My Bonnet and Hatbox cake is a 14"  two layer white cake with rasberry filling covered in Fondant. The pearls were made using a silicone mold dusted with pearl dust. Between fondant strips is Scroll work done with royal icing, the flowers were made of gumpaste and hand formed then lightly sprayed with color.  The bonnet bow was a fondant and gumpaste mix for firmness and stabilty and attached with a tylose & water glue. Cake Decorating Classes, Knoxville, TN

I am new to the Knoxville area and wanted to let everyone know that I have Wilton classes at Michaels on Kingston Pike in Knoxville, TN.

I have been a Wilton Instructor for almost 3 years at Johnson City, TN Michaels. I look forward to having great classes here as well. I just had training for the new Course 4-Advanced Gum Paste Flowers and am very excited to get started teaching this class.

Icing Sheets

Icing Sheets in the Winter! In the winter time, as it gets colder, any brand of icing sheet tends to dry out.  Some brands dry out quicker than others.  Think about it, you have a thin layer of icing on a piece of paper.  It is the moisture that adheres it to the backing or paper and the moisture also keeps the icing sheet plyable.  In the dryer times of year or even dryer climates, the moisture begins to evaporate which can cause several problems. chalk or petal dust for gumpaste flowers????

I was wondering if anyone  is purchasing petal dust to use on their gumpaste flowers, the price for the petal dust is so high and you get a very small amount.  I decided to purchase some non-toxic chalk from an online cake supplier, it was still very expensive, so my next great idea,lol, was to go to Michaels craft store and purchase Soft Artist chalk Pastels, they are non-toxic and for only $5.00 for a box of 36 plus coupon they are a steal. Elecronic cutting sheets by Icing Images

Number Cakes

When I do number cakes, I bake cakes in 1/2 sheet pans and usually do two layers and carve the number out of the sheet cakes.  Just mak sure your cakes are slightly frozen before carving.  You can use the leftover cake to make mini cakes or cake pops.  I hope this helps.

100th Birthday Cake - and the client wants me to bake the numbers themselves. Need suggestions....

I have to create a cake for a lady's 100th birthday.  Her daughter wants 3 cakes which represent the numbers, "100" and it needs to serve about 75 people.  I have two choices, bake cakes and put them together somehow, or bake cupcakes, line them up so they look like the numbers and frost them all together.

 

Any suggestions?  I could put two rectangular cakes together for the number "1", but am clueless what I could use for the zeros, unless I use a wedding cake pan-and then…
