Gluten, Wheat & Dairy Free Coconut Cake Recipe

For a while now, I've been searching for a gluten, wheat & dairy free cake recipe. A friend of mine asked if I can come up with a recipe for his daughter "Stella" who is turning 2 and has the allergies listed above. They have tried making the boxed cakes offered at the specialty markets, have gone to bakeries that offer the allergy cakes, but to date, have not liked any of them until… Continue

Interesting offer from potential client

When I dropped off the Hello Kitty and Super Mario cakes at the kids' birthday party at the bowling alley - all heads turned. Almost every person at the bowling alley (a popular kids birthday party location around here) came to have a look. The owner of the bowling alley asked me to make a castle cake that they could sell off of their website for the parties - they'd take a commission of course. I'm excited to try it. I'm not sure on pricing, or what the market will bear around here (we're…

March 11, 2010

I just talked to my niece. Her son's first birthday party is the 20th. She wants me to do a Finding Nemo cake for his party. I'm really excited to try it. Plan on doing a RKT fondant covered Nemo on the top, with all the other characters around the tiers. I can't wait to get started. I can start the gumpaste parts this weekend - I plan on doing some coral and shells. Will do the major characters out of fondant.

On another note - made a pink lemonade cake from scratch yesterday…

new

I am by no means a professional! I used to love when my mom made my birthday cakes when I was a child. I started playing around with making cakes a little over year ago. I really just make them for close friends so I can get some practice! lol I married the man of my dreams this past April in 2009, and I've been a nurse for 5+ years working in the Nurology ICU... Needless to say I have a lot of patients, which helps with the tedious tasks of decorating cakes! My… Continue

Another newbee here!

Good morning everyone, just wanted to drop a line and intro myself.

Found this awesome place and see some familiar faces/names thank goodness. I reside in the wonderful state of VT. (sometimes it's not so wonderful). I am the owner of a custom cake shoppe and just this past year opened a cake studio in town. I do all the baking at home, but needed the separate client consultation space, and found a nice little spot right on main street in Wells River, VT.…

Hello! Hello!

Hi, I'm new to this website. I love it! I'm a retired nutritionist. My job for the past 3 years has been getting to know my wonderful 16 year old teen daughter who is active in dance and drama. Yes, we have days with her when life is a challenge, but who doesn't with a teenager! She is emotions and hormones and I'm tired and menopause. I have a wonderful husband who has been so supportive of my cake and baking hobby these 18 years. He loves weddings. My husband and my daughter help me to… Continue

Hello Everyone

Hello Everyone, I just wanted to properly introduce myself so you can know little bit more about me. I am a counselor just not yet licensed (working on it) :) I have been married for 7 years in this June and I have two beautiful girls(5 and 4 years old). Once, I graduated from grad school, my husband and I decided that I would stay at home until both girls would start school and then I would work on starting my counseling career. Well, staying at home made me fall in love with caking. At…

Gluten-Free baking for Celiacs (with recipe & frosting to try!)

Gluten-free baking poses it's own unique set of challenges, and once you start baking without wheat based flours you'll notice that each gluten free flour has it's own unique properties. Gluten free flours do not rise as easily or high as wheat flours and you'll often notice an abnormally high number of eggs used in recipes to help resolve that. Also using a small amount of guar or xantham gum in your recipes helps reduce the "crumbling…
