Huh - I've never had a problem with covering a cream cheese frosted cake with fondant. Were you using homemade fondant or store-bought? I make the Marshmallow fondant and it was fine. I did put the fondant on the cake the same day it was cut, though. So it didn't sit for any length of time.

I think you could easily color the cream cheese frosting, Ria.

I've found that when you are first starting, a good thing to do for kids' cakes is buy age-appropriate toys at the store in whatever theme you are thinking of doing and then decorate around those. So if he likes Cars, maybe you could get a set of cars, make a round cake and do a racetrack on the top of it with the cars on it. That way, he has toys to play with afterward. :)

I found out the hard way that covering a carrot cake with cream cheese frosting and then covering it with fondant is a no-no!
What I do now is I layer the carrot cake with cream cheese frosting and crumb coat it with a very thin layer of it as well ... after it has chilled for a while I cover it with buttercream and let it crust .. that way you can cover it with fondant without problems! .. and the buttercream doesn't interfere with the taste of the cream cheese frosting ..
Maybe cuz my cream cheese frosting is softer than most? I have no idea! I just use this method now and it works like a charm :) ..

Hi Ria, maybe you can theme your cake on your child's favorite tv programme depending on your skills. Or a teddy bear would be a first good figure to try and you can't go wrong with cutters for easy decorating.

Ria - here is my simple cream cheese frosting recipe:

8 oz. cream cheese, softened
1/2 c. butter, softened
1 1/2 lbs. powdered sugar
1 tsp. vanilla

Blend cream cheese and butter well. Gradually add powdered sugar and beat until smooth. Add vanilla and blend well.

Since I'm not sure what your decorating experience is, I'm not sure what to suggest. Do you have basic supplies like tips, bags, etc? Have you ever taken a class? Have you ever tried using fondant? What does your son like? A great place to get ideas is www.wilton.com since they have designs for every skill level and they tell you all the supplies you will need.

Is it for a child or an adult? You can cover carrot cake with fondant (cream cheese icing underneath works just as well as buttercream) or do something more traditional with the icing. Love to help you out! Just need more details. :)

Hi Ria, you can decorate the carrot cake with cream cheese icing and there really isn't anything you can't do on a carrot cake. Just pick a theme and then people can make suggestions for you.
