Cake Decorating Community - Cakes We Bake

Finished Wilton course #2 last week! My final cake turned out pretty good! I enjoyed doing the basketweave and royal icing flowers; hated the birds, but put them on anyway! I have to say, though, people who eat this cake have to REALLY love buttercream icing cuz there's a whole lot of it inside and out! I'm really looking forward to course #3, which I start this Wednesday evening....fondant! I have so many ideas and have been just waiting for fondant instructions! I do know that , eventually, I would like to make my own fondant using marshmellow so people will actually like the taste of it! I ate a cake that had marshmellow fondant and it was amazing! But, for the classes, I'll stick to buying the Wilton fondant that they recommend. Plus, no time to experiment the next few weeks :o) Can't wait!!

That Course 2 basketweave cake sure was a sugar bomb, wasn't it! LOL! I remember when I cut into mine. And it seems like a tiny cake for all those royal icing flowers. Ah, fond memories. I should be home making gumpaste roses for my final Course 3 cake. Manana, manana. I made 2 other cakes this weekend and had a garage sale, so I'm going to blog a bit and then call it a day.

I would say about a month. If it's older than a few days, though, I prefer not to use it for covering a whole cake. For that I prefer to use fondant I made the day before as it seems to be more elastic. I'll use the older fondant for smaller accent pieces.

How long can I keep MMF in the fridge?? That's a great idea! I'll have to keep royal icing flowers and MMF handy at all times, lol!

Very cool, Dia! Yes, the Wilton stuff is "o.k.", but like Theresa said, there's better. And I LOVE the MMF I make - so easy to make, so easy to use. I usually make sure I have a batch in the fridge at all times in case I'm inspired to try something new. :)

Not only does marshmallow fondant taste better than Wilton's, it's easy to work with. Sometimes Wilton's comes out of the package as hard as a rock. There are much better brands out there.
