I don't care for royal icing either. I make a glaze icing. Put some icing sugar in your bowl then add a little water at a time to a medium stiff consistancy. Thin enough that you can squeese it through a decorating tip yet not too runny. Flavor it if you want to. Color what ever you desire. This dries shiny and hard enough to stack still soft inside when you bite into it. You can flood designs with it, let that dry then on top of that make another design. Cannot make stand up flowers, only flat ones. I have pictures of teapot cookies done this way but haven't had time to upload them. Dial-up is too slow!
You can also use rolled out fondant or candy clay...just cut out the same shapes as you used for the cookies and lay them on top of the cookie. You will have to paint a very light film of water under to make the fondant or candy clay stick....very thin film.....or a very thin film of piping gel.
Here is a recipe for buttercream that I use to decorate sugar cookies....

Yes it does crust and I have had success in stacking cookies iced with this icing. You kind of have to play around with it. If you leave out some of the shortening it will crust better. When I worked at the cookie store we would dry our cookies in the oven. After they were left to sit for a while and firm up, we would put the cookies on drying sheets (looks like a cookie sheet with holes in it) and pop them in the oven for 1 minute (the oven was set to our normal baking temperature) and then we would put them in the freezer for 5 minutes. This allowed us to get the icing hard enough for packaging...I have tried this at home using a regular cookie sheet and had much success. Hope that helps.
I use powdered sugar... thinned with a little milk and a couple drops of Almond Extract.... wonderful flavor and they dry hard and are beautiful!!! I wish I had time to make sugar cookies before my surgery but won't happen this year. I love making Christmas cookies!!!
I can attest to the taste of Kathy's cookie frosting, very very yummy!! And the cookies stacked very well :D
Kathy - I didn't know you had a Facebook page!! Just "liked" it so I can follow your baking. :) Mine is Handcrafted Cakes by Eileen

Depending on time this year I may do some decorated cookies for Christmas - planning to try this recipe - your pictures make it look so tempting to try!!

In the case of the cookies that Serious Cakes tried, I did a little shipping experiment with my cookies. I sent out 5 boxes using the United Postal Service.  The cookies went to North Carolina, Minnesota, Oklahoma and Pennsylvania.  Of all the cookies shipped there was only one broken cookie and two that were a little smooshed.  So the icing is pretty stable when it comes to stacking.

Eileen, thanks so much.  Happy to have you on my page!  You'll love that recipe.  It's very similar to the one we used at the cookie store I worked in.

I am just wondering, can that buttercream icing be frozen?  I know some people freeze decorated cookies with Royal Icing, but I'm wondering about the buttercream?  I ask because I need to make 300 cookies for a school fundraiser.  I'd like to get started so I'm not trying to decorate 300 cookies the week of, in addition to organizing the event :-)
Yes it can be frozen.  I made all my Christmas cookies ahead of time and froze them.  When you take them out of the freezer to thaw you can leave them in the closed container until they  are defrosted or is you just need to defrost a few quickly you can defrost them in your oven.  Just preheat your oven to 325...place the cookies on cookie sheets and pop them in the oven for 2 min., pull them out and let them sit till cooled.  Good luck with your project.  Would love to see pictures of your cookies when you are finished.

I have used MMF to cover my cookies.  While the are baking in the oven, I use the same cutter to cut the MMF.  When they come out put the MMF shape on.  You can then pipe of details if you wish.  I made cookies this way for a birthday for my in-laws & there weren't any cookies left over after the party.
