i think you can use the grandulated sugar for this one also , it works better , since you heat it just like any other syurp,

This can be made sugar-free.
This particular recipe is not like making a syrup--it's liquid thickened with cornstarch (cornflour)
If you boil it too long it will break and get runny. Potato starch will work as well, you use a little less, and it's clearer and stays thick longer--less likely to break if you overcook it.
There is also a product called ClearJel Instant, a modified food starch that will thicken your liquid instantly without lumps and withstands higher heat and longer cooking as well. I found it online and it was reasonably priced. This is the site I bought it from--this site is a great source of spices, salts, etc. They often give free excellent vanilla beans with an order, and a free sample of any spice as well.:

hey everyone
so i tried the homemade gel last night without much success. I think as Cyn explained, if you heat it for too long it will become runny? Mine had a think hair gel type of text but when mixed with the gold dust mixture, it browk apart.
I've attached pics of the the different stages of the process - maybe someone can explain what I did wrong?

I made the homemade gel first then coloured with white food colouring....then I added the gost dust and sugar mix (the other recipe u provided) and added the gel to the gold with the dust mix? is this wrong?
I thought you add the gold mix to the home made piping gel?
yes , they are 2 diffrant recipes ! one is just gel , if you want the gel gold i would think you need disco dust ! the luster dust is for the piping gold icing ! only use the aztex luster dust for the gold piping icing recipe ! lol ,
