Florida ICED Cake Competition

Don't miss the biggest cake competition in Florida! On Sunday, March 27, 2011 we will launch the first annual Florida ICED Cake Competition in Ocala, FL to benefit the Make-A-Wish Foundation. We've got 3 different competition categories - Romantic Wedding Dress Cakes, Wedding Accessories (sugar art displays), and Decorated Cupcakes & Tasting. Buttercream or Fondant which do you prefer????

Some people are old fashioned and dont like change,some love to try anything,i have to admit i love my buttercream,but love to decorate with fondant.Which is your favorite and why?

sanding sugars & edible diamonds

Has anyone had experience with sanding sugars and edible diamonds on cakes? Iam making a wedding cake for december,and the fondant has to be covered with sanding sugar (white) and i will be adding the edible diamonds on the lace effects. My biggest concern is how to apply the sanding sugars & the edible diamonds? I wouldnt want them falling off.
