I have the large Mat and love it. But the smaller version would be ideal for working with smaller cakes and gum paste work. The pro Mat is just too big to use everyday for smaller stuff. If I could have bought the smaller Mat 1st, I would have. But it is a great product, and well worth the $$$. A word tho. I ordered through another website, and should have ordered directly from Sweet Wise. Was cheap then, but now there is a special rate to Canada.

I'm well aware of the controversies out there on buying plastic and using it to roll fondant on. I researched it before buying mine, and I also looked at all the info on the kind I bought. Sweet Wise claims they sell the only "food safe" vinyl. Maybe so, but I have found multiple cake suppliers that sell their versions of products for rolling fondant on. The vinyl I bought is made in the USA and is made with the same plastic found in my water pipes PVC. Here is a link that explains some of my findings. I would never put my customers at risk without researching thoroughly. http://www.vinylnewsservice.com/MainMenu/Factsheets/FAQs.aspx

I have weighed in on this topic before. I know Sweet Wise is not the only place that sells food grade viynl. They have used clever advertising. Good product, I have The Mat, so I now how good it is. I began my search for a smaller size Mat, this was before Sweet Wise offered theirs. I can buy FDA approved, food grade vinyl in a roll at my local WalMart.

They charge so much per ft/metre, so I can buy as much or as little as I need. I know there must be other outlets selling it this way as well. Of course, this obviosly depends greatly on where you live. Could be that buying through the internet is your cheapest, or maybe, only option.

I looked at Sweet Wise's site and did watch the videos, and I did like that the "new and improved" mats have guide lines as well as a chart that tells you how much fondant you'll need to cover the size cake you have. That is quite handy, at leat for me, I tend to double check things, plus I hate rolling out fondant only to find I don't have enough. Their videos not only show their products & how to use them, but also have tips how to handle those pesty little problems I'm sure we have all come across.
