I started doing specialty cakes almost a year ago, when a friend showed me a picture, and asked if I could reproduce the cake for her daughter's "Sweet 16" party.  It was trial and error, but it came out pretty good... and I was hooked! I get a lot of ideas from sites like this one, watching videos on youtube, reading, and practice at home.  I have done many cakes, and next month I'll be doing my first wedding cake.  I'm so excited!

I've had a flair for cake making since my teenage years and i got to practice.   i started by making cupcakes getting my recipes online. now i can make a whole variety of cakes just by surfing the internet and getting recipes. I now make a good range of cakes and I'm now planning to go into party desserts ( cake desserts). Plus I learnt cake decoration online too. my cakes are pretty neat and I've also done a couple of wedding cakes. All these without a formal training, tnx to websites like this

Christine and Michelle it so surprising to a lot of people some of the top people in the industry have no formal training. Sometimes but not always certain training can limit ones creative ability.

I was just asked to make my husband's daughters wedding cake in Oct. I thought about trying to do a dummy cake for practice, I have the petal pan dummies and would like to know how to go about putting the icing on. She wants three layers. I don't have much practice with fondant but read about poured fondant? Any ideas or advise?

Sandy Harris, I don't think you would want to use poured fondant for a wedding cake with tiers. Fondant itself isn't really difficult to work with, it is my favorite icing to work with (I struggle with buttercream sometimes lol). Marshmallow fondant has the best flavor and you can make it yourself easily, especially if you have a Kitchenaid. I would be happy to send you my recipe if you would like to try it. Has she gave any details of what she would like besides petal shaped? I am doing a wedding cake for February 29th (Leap year wedding) and the couple is asking for fondant icing with butter cream roses...will be different since I have never melded the two mediums together. It is going to be a 3 tier also (top tier not for serving but for their 1 year anniversary). You may message me if you would like to throw ideas back and forth. Good Luck!

Sandy, I just made a Valentine cake using a petal pan and I was sweating bullets that fondant would be hard to do on it, so I 'thought' I would do butter cream instead. I started out with the butter cream, and it looked horrible, so I went ahead and put the fondant on and it was so easy and looked so much better. I'm with Carol as far as the poured fondant. I think you would be up to your eyeballs in mess and frustration. If you have dummies to practice on, I would practice using the rolled fondant on them to get the 'feel' and I think you will be amazed that it isn't as hard as you might think. Since you don't have to do the wedding until October, you have plenty of time to teach yourself.

Carol, Thanks so much for the reply. I would love to have your recipe, I have heard alot about mmf but haven't tried.  She is having a beach wedding and wants two chairs on top layer and fence and seashells on other layers. All of these are new things for me to try.

I'll second the marshmallow fondant. that is all i use because it is easy to work with and tastes amazing.and so much cheaper since you can make it yourself. i cover cakes with it and make all my decorations and figures with it. people say they have problems with it drying hard enough and they turn to gumpaste, but i have never had this problem. it dries perfectly fine for me and if left long enough rock hard. good luck with your upcoming cake! here is a link to a recipe i use:http://candy.about.com/od/fondantcandyrecipes/r/mm_fondant.htm

Thanks Tiffany for the link. I will give a shot.  One person told me to use piping gel instead of buttercream on the dummy cakes? I have to get my future son-in-law to fix computer so I can download a cake matrix to be able to give prices, for some reason I can't get it to open. I made two star gazer lilies for the first time, they are on last cake I posted. Daughter wants two of those on cake. Red decorations on Beach theme cake.
