Cake Decorating Community - Cakes We Bake

I just finished decorating a sm. 3 tiered cake, I filled it with a thick mousse and also put an icing dam, but still had an icing bulge at the poing where the layers meet, any suggestions on how to avoid this problem?

Sherrie - you can do the filling and crumb coat the day before and let it set over night. That way you can scrape the bulging icing off after it settles before your final decorating. Also make sure the frosting you are using for your dam is medium at best, stiff is better and fairly thick. I learned these lessons myself by experience. :) I use mousse as filling a lot. I also make sure the mousse has had a chance to set overnight before putting it in the cake. Hope that helps!

Thank you Eileen, I have a tiered baby shower cake to do this week, I shall try everything you said!

I completely agree with letting it settle overnight, but you could also be putting to much filling or your dam is too close to the edge of the cake. I usually place my dam about a quarter inch away from the edge.
If you are putting more than 1/2" of filling you are putting too much and that may be another reason you are getting a buldge...
Great advice and I will remember this for sure!

About the 1/2" filling, I've always wondered about that because I've put too little NOT enough filling and now I have a guide.
Thank you!
Sher
