Wow you are crazier than i am for accepting such an order!!! It took me 1 week from start to finish, working 14 hours a day to complete 500 mini cakes. I even had to stay up the whole of the last night. Its not impossible though if you dont mind little sleep. When do you have to make them? The best tool for mini cakes are the alan silverwood mini cake pans. I would suggest investing in a couple of them and buy the reuseable liners to go in them. Can i ask why have you only 3 days to complete them? Are they to be covered in fondant or buttercream? If there is any info i can help with just let me know. Claire x
