Teniesha, also take into consideration the weather, I think you are in a hot humid climate (right?)..humidity puts moisture in the air and will put added moisture into your fondant so using even more than the recipe calls for would not be out of line for that type of climate...if after resting it is still sticky knead in more powdered sugar until as sharon says its like bread dough and should not be sticky to the touch...and always grease your plastic before wrapping the fondant...double wrap in plastic and store in gallon size zip lock bag.
