I was wondering what types of recipes people use for fillings for cakes that do not need to be refrigerated. I rather not use a buttercream but is that my only option? If so anyone have any good buttercream recipes that would go with a chocolate cake?

Ganache can be left unrefrigerated.

I usually fill my cakes with the the filling that comes in a sleeve, they don't need to be refrigerated.  You can find them at food wholesalers or on-line.  I have tried them and really like them.  If you don't want plain buttercream, what about mixing some perserves (I like Solo or Polaner) into the buttercream.  Another option, use Nutella mixed with some buttercream.  Mixing some creamy peanut butter with buttercream is good too.

Oh Melissa, I'm so glad you posted about the fillings in a sleeve.  I just bought the Key Lime filling and haven't tried it yet, but I'm happy to hear a good review of them!  The lady at the specialty store said she loves it and uses it for key lime pie all the time, and that it would make a stellar cake filling.  Will find out this weekend!

hmmm I've never seen these fillings in a sleeve? Will check them out.

if I use ganache icing as my filling, do I still need to use a dam before I fill the cake? It will be covered in fondant.

With chocolate cake, Nutella and Oreo are my favs and delicious!  For Oreo, blend some Oreo Cookies (without the cream center since BC is already really sweet) and add it to the buttercream.

 

I used to use seedless jams for fillings until the director of our local extension office pointed out that jars of jam and sleeves of fillings are only safe until you open them.

After that they need to be refrigerated.

I now use the Lorann oils for flavoring my BC (all veg shortening) and have yet come across a flavor that was not true, and can leave my products out without worries of making anyone sick.

How was the Key Lime?  We don't have that at my local food store...wish they did because I would be buying it!
