when doing a stacked cake, what is the way to unassemble it, for example, a 2 or 3 tiered cake, is there a particular way to cut the cake or take it apart for cutting. Do you normally remove the top tier or just cut around it. The icing between the layers makes the top cake stick to the bottom cake, is this how it's supposed to be? I just wondered if you can take the tiers apart without having a mess of icing everywhere and it looks bad. I normally just use cardboard cake boards on the bottom of each cake. I haven't been able to find any tutorials on how to take it apart for serving it.

I just cut the top tier, serve it, then remove the cardboard and move on to the next tier. There's always damage to the layer below the cardboard. As long as it looks beautiful before you cut it, that's what counts.

Theresa is right, Wendy.  No way to avoid damage to the lower layer.  I, too, cut the top layer then remove the cake board.  If you prefer to separate the tiers to cut, it is easier to unstack if you use waxed paper between your cake board and the frosting of the lower tier - sequence from the top down: cake, cake board, waxed paper, cake.  When removing, slide your lifter between the cake board and waxed paper.  Makes removal a lot easier.

I tend to dismantle before cutting, but that's usually because I have different flavours on each tier and like to give people a choice.  I also use a cake card under the top tier and stick it down with icing.  Yes, you will slightly damage the tier underneath, but it's never really been that bad for me.

haha true Katy! When you say cake card do you mean like a cardboard cake board? That is what I use.
