Cake Decorating Community - Cakes We Bake

It was a big "NO" to fondant from hubby so this is what I ended up with. Piping is not my thing but I gave it a try and I'm pretty happy with it. Not perfect but will do. I am getting better at smoothing Swiss buttercream at least. Cake is white cake/pina colada filling made with homemade pineapple jam & toasted coconut/coconut Swiss Meringue Buttercream

I still struggle with Sandra.  Funny thing is that I forgot to change from the whip to the paddle when mixing the butter into the meringue and I found that I was able to smooth it out so much better.  I actually used the upside down method.  Really helps in getting that smooth top.  http://cakecentral.com/a/upside-frosting-technique

The frosting is as smooth as fondant!  I envy you since I am still trying to master the technique.

Thanks everyone.  This is not my favorite flavor but have to admit it tasted pretty good.  Hubby loves this flavor combination.

Your piping looks fine to me. The cake sounds delicious. Coconut is another favorite of mine.
