Jean - Jan 18th is my birthday too!  This should be a big year for us all - we are opening a shop in February (till now we have been home based) which is a huge leap for us.

I need a cake pop expert, or just someone with more experience than me would be good, lol! How do I keep the candy shell after its hardened, from cracking??

Congrats Jean!!
I have been away on 2 wks + holiday, so slowly trying to read all the threads I missed. How exciting. I was in Honolulu on Inaugaration day & we watched it live. So cool. Did you actually get to meet the President?

Danielle: Congrats as well for the new shop. All the best in your new venture.
To all who have joined this group while I was away .... A warm welcome!!

Melanie: Besides this spot to post your question, for maximum exposure. I would try the Forum section as well in either Cake Decorating or Decorating Techniques. Wish I could help you Melanie. I have only done cake pops twice. I did add corn syrup to my melting chocolate so it would spread evenly and dry shiny & without leaving streaks. Perhaps you could try that. Hope that helps.

@Melanie.  I think I'm right in saying that the reason the candy shell cracks is because your cake balls are too cold when you dip them.  They will expand as they come up to room temp and crack the shell.  Either that or your coating is too thick.

Any suggestions for a 10 year old boy who told his mom all he cares about being on his cake is bacon?? Lol! Not sure if real bacon is the desire, or if fondant bacon is the way to go, lol. This one is a first in my 15 years!! :)

Apparently Melanie

Candied bacon is the new hot trend on cakes & cupcakes. I tried to post a couple of recipes here, but site says I am over the aloted characters.

I've made candied bacon before, just never had it requested for a cake, lol! I guess this one will be interesting! Lol!

I watched a cupcake challenge & one of the winning cupcakes had a maple syrup flavored icing with candied bacon.  I have candied fruit & peel, but confess, never bacon.  I think on the right cupcake,  like a zucchini/carrot/ etc, it would be tasty.

Guess you will have find out if he wants the real deal or pretend gumpaste bacon.

:o)
