Anne, after watching the video that Katy posted, if you are using the first tip (No. 67), if you also have a small bowl of water handy to moisten two of your fingers, you can then draw the fragmented tip of the leaf together by using your moistened finger tips pressing the leaf together. The second tip that she used on that video is the one I use the most for my leafs, although, I noticed that the lady in the video had very thin icing. I usually have mine a little stiffer than what she was using. It might just be me, but I like to have mine stay in its place once I make the leaf. Good video, Katy!

Anne, I so know how you feel.  My Mum was a wizz with this tip and I just don't know how she got so good!  You'd think it would be the easiest thing in the world wouldn't you - oh I'll just a a few quick leaves here to finish it off.  Will you heck..........

ooooo Anne - I forgot that I had found this video ages ago, put it in my favourites and then forgot about it.  It's this very clever aussie lady who decorates cupcakes with just parchment icing bags cut into shape at the end (no nozzles involved).  And she does leaves that look really good!  Worth a try perhaps?  Bit we're interested in starts at about 2m 30s in. xx

I am making a ice cream cake. can you freeze buttercream?

Comment by Melanie on October 5, 2012 at 2:24am
I've froze buttercream on an ice cream cake before, it turned out good, but the second time I made it, I used 3/4cups of shortening, 7 oz of marshmallow creme, 3 c confection sugar, vanilla, and 2 Tblsps of milk. The marshmallow keeps the icing a little softer, even when frozen. :)
