Its nice to be wih you guys. I learnt cake baking online precisely bakng 911 and wilton sites and honestly itsbeen wonderful. I also did a course on fondant and buttercream at a local store in my locality. Although am into cake decorating parttime cos im still in a paid employment which doesnt give me time but very soon, i hope to quit my job and pursue my hobby which is baking and decorating

Thanks so much, Edna! I'll have to check them out. I went to a local store to meet the instructor tonight, but after waiting for 15 minutes past time for the class to start, I left. As I was pulling out of the parking lot, I saw her gathering her supplies to teach. I went there ready to sign up for a fondant/gumpaste class. But I can't handle tardiness - I work full time AND make cakes. I don't have time to wait around. Now I've decided to buy the essentials and learn from the best... Y'ALL!

Here's the question, though... What are the essentials? To learn how to use gumpaste/fondant, what tools should I get to start?

Adedamola, baking911 is AWESOME! I love that site! I have learned A LOT there, too. But I think this site is more user-friendly.

Hi everyone, I have been doing cakes for about 4 yrs after taking a couple of Wilton courses. I love it. I have learned a lot more from the internet and videos, though than from the classes. I did several cakes before I took classes. I love fondant work. I make my own marshmallow fondant that everyone loves.Hopefully my daughter and I can start our bakery soon. We have a lot of people asking us all of the time. I just finished up a wedding cake this past weekend for my nephew's wedding. It is the lighthouse cake in my pics.

I love to make mmf. It is really easy. It is just marshmallows and powdered sugar.
INGREDIENTS

16 oz White mini marshmallows
2 - 5 Tbsp Water
2 pounds Powdered cane sugar
1 tsp vanilla (or other flavoring)
1 tsp butter flavoring (opt)
1 tsp almond flavoring (opt)
1/2 C vegetable shortening (for the kneading step only)
DIRECTIONS

In a large bowl, melt marshmallows and 2 Tbsp water in microwave for about 1 minute, stir in flavorings and return to the microwave, stirring every 30 seconds until mixture is completely melted. Add about 3/4 of the amount of powdered sugar to the marshmallow and mix in. Dough will be stiff.
After fondant has cooled just a bit and is safe to handle, grease countertop with vegetable shortening, also grease your hands.
Knead fondant, adding in the rest of the powdered sugar (you may not use all of it) until a smooth elastic ball is formed. You may have to add more powdered sugar if dough is too soft. Add more water (a tablespoon at a time) if it is too dry and tearing, add more shortening if too sticky.
For chocolate fondant: add a few melted squares of semi or bitter sweet chocolate to the melted marshmallows before adding in the powdered sugar OR you can replace 1/3-1/2 cup of powdered sugar with powdered cocoa. For a deeper brown color, just add brown food coloring.

RECIPE BACKSTORY

Unlike store bought fondant mixtures, this fondant tastes GREAT! It has a fudge like taste and texture. You can use this fondant for covering cakes, making decorative accents, topping cupcakes, or decorating cookies.
This is my favorite recipe for it. My kids all tell me it tastes like circus peanuts.

Daisy, ive got a recipe and it looks pretty simple, just water, marshmallow and icing sugar. But i wonder if it really is simple ..? :)

I think it is pretty simple. the longest process is the kneading part of it.
