If it was all real cake, I would definitely do some of the stacking at the venue. Most of my brides have been doing fake cakes with the top two being real cakes. (One to cut into, the other to serve). Then I make sheet cakes to make up the servings. This makes it way more convenient for me. Super easy to transport stacked fake cakes. I just either put royal icing between the layers for them to stick, or I will use a sharpened dowel rod and hammer it down the center. If I'm not going far and the cake isn't as high, I'll transport it with the two real cakes on top. Otherwise I put it on at the venue. :)
