Good luck Laurie, good idea to practise. Just make sure your cake is well chilled before you start to carve! There is actually a video tutorial on CWB for a purse cake. Here's the links to it, don't know if it will be of any help -

Well, I have just discovered that our local show held at the end of August has a baking section in it. So I decided to take a look at the categories and see what appealed for me to enter. What an uninspiring selection it is - I suppose it is centred more on general baking than caking as such, but here is what you can enter!
139 WHITE LOAF, any shape, approx 2lbs
140 LOAF WITH ADDED INGREDIENTS, eg flavours, grains, approx 2lbs
141 SPECIALITY LOAF, eg focaccia, tear-and-share.
142 FOUR BREAD ROLLS, any type or shape.
143 VICTORIA SPONGE, jam-filled, undusted.
144 DUNDEE CAKE
145 LEMON AND LIME DRIZZLE CAKE, to recipe on page 28
146 BAKEWELL TART
147 PLATE APPLE PIE with extra ingredient eg rhubarb. Pastry top & bottom
