Cake Decorating Community - Cakes We Bake

Hi All,

I'm curious to know your experiences with gas ovens or electric ovens when it comes to baking your cakes better. Right now, I have an electric oven which came with my house when we purchased it. I find that my cakes are not as moist and the tops crack more. My mom as a gas oven that works really well with my cakes. I was interested in purchasing a gas oven, but then I read online that it's better to bake in an electric oven because there is more even heat. Is it just that I have a bad electric oven?

What have your experiences been, and which do you prefer/recommend and why?

TIA!

Fazia I have used bothand gotten good results with either one. I think the issue really is temperature. It is very important to bake cakes at the peoper temperature so get yourself an oven thermometer and check your oven. If your dial is different than hat the thermometer is saying your oven is not accurate. You will need to adjust the oven dial. For example your oven dial is set for 350 degrees F but your oven thermometer reads 400 degrees. Your oven is 50 degrees hotter so adjust the dial to read 300 and you will get the right temp. If it is off more than 50 degrees you will need to have it recalibrated.
Thanks for your help Karen! I'll definately look into the oven thermometer. It's the 2nd time I've heard about it, so I'll give it a try with my oven.
Not only is temperature important, even heating is key. That's why I prefer a convection oven. So, my cake will cook the same whether it's on the top rack or the bottom rack. I have found that with gas, you have to be really careful not to burn things that are too close to the flames. That's why I have a gas cook top but an electric oven.
