I melted orange candy melts 2 bags on a double boiler, the chocolate was so thick not smooth, I couldn't roll my cake pops on it. Any ideas of getting the chocolate smooth and thin? Am I putting to much candy melts at a time?

Add some Crisco Shortening Cecilia...it helps with the thickness .....
You have to be careful not to get water or condensation in the candy melts or it will seize....get thick and lumpy....I think you are putting too much in and the steam is getting into the chocolate. All you need to do is bring the water to a simmer then turn off the heat....let the candy sit for a few minutes to soften then stir until it is smooth...it will take a little longer this way but you wont have to worry about water droplets in your chocolate.
