hey Karen awesome discussion thanks for bringin it up..I had this same convers. with my wilton instructor and we came up with a food safe alternative for the wires..let's face it the wires are cheaper and hold the flowers better...we thought why not wrap the wires with cellophane or saran wrap...I had seen it done by another instructor on a youtube video and when you think of it..we all use cellophane on food so it should be fine for cakes. this way no one gets hurt..
If all else fail..you can tell your clients that to be careful with the flowers upon cutting it:)

That is a good link however it doesn'taddress the fact that wire and floral tape is not made to come in contact with food. Floral tape has latex in it and can be a severe allergy for some....also wire usually has some toxic metal like lead in it so that is a definite NO NO. The only wire that is suitable is stainless steel or copper...the same stuff that pots and pans are made of. If you are going to use straws make sure they are longer than the wires. If you cover the wires with anytthing like paste or chocolate the coating may break and expose thre wires. I know it is a PITA however when it comes to food safety it is better to go the extra mile rather than have someone sue you or get closed down by the local health inspector.
I just purchased Duff's Decorative cake wires....I was wondering if anyone has used these wires and do all you cakers think I should use the straw/coffee stirer method with these wires also...they look like stainless, but they may not be. I wish they would put it on the packaging what it is made of. Thanks.

Yes it is smarter to be over cautious.. the straws seem to be the safest....food grade plastic and large enough to not be eaten
