I have never made MMF or worked with MMF before.  Can I add colour to it after it has been made and settled?  I need a small amount of various colours and this would be the most convenient.

 

How long before I will cover the cake can i make the MMF?

Hi Linda, It's easier to color the fondant right after the marshmallows are melted, but you can add it later. It's just more work mixing the color throughout the fondant. I leave the fondant overnight. Six hours is preferable, but if you can't wait that long, give it at least an hour to set up. If wrapped well, fondant will last a long time.
I find it is very easy to color after it is settled. Especially since you need several colors in small amounts, it will be very easy. I have some MMF that I made over a month ago and just used it again this last week, it was just as nice as the day I made it! Just keep it wrapped well in plastic wrap, and then in an air tight container or zip-loc bag
you can nuke it for about 2 seconds at at a time makes it soft
Linda, MMF is best for covering cakes when it has rested at room temp for at least 8 hours...yes you can color it after it has rested if you just need small amounts of certain colors. but if you are making a batch to cover the whole cake then adding the color when the marshmallow is in the melted stage is easiest.
I leave my MMF white so I can add various colors when I need them. I also add 1tsp of vanilla and 1 tsp of almond extract to each batch. I let it rest for at least 8 hrs before I color it so it will work easily. When you store it I coat it with crisco from your hands and double wrap it in seran wrap and place in a freezer bag without any air in it. I have stored it in the frig for months, be sure to date it. Also have left it out on counter if using it within 1 week. I want to try making choclate fondant soon. Be sure to coat all of your equipment with crisco so it will be easy to work with and not too sticky. Good luck and enjoy!
