Cake Decorating Community - Cakes We Bake

Sorry if I posted this is the wrong place, but I am at a loss here. I am trying to decorate a cake for my Granddaughter and she specifically asked for a Rapunzel cake. I have decided to do something a little different, and I would like to make Pascal out of Modeling Chocolate. Green of course, but I heard that using the candy melts is very complicated, and wouldn't work right by melting and mixing with corn syrup. So, my problem is, I have seen Cake Boss and others making their characters using multiple colored modeling chocolate, how is this possible? How are they doing this? Are they making white modeling choclate and then mixing it with some colored dust to make the different colors? I need help since I haven't ordered anything, and I have 3 weeks to the big day. I will also fill everyone in on what else I am planning, but need help with this first. Thank you!!

J.D, I make white modeling chocolate, 2.5 cups white chocolate chips and .5 cups corn syrup, after it has set up, I knead gel paste food colors into to it, works like a charm

Yes, I do the same thing. I also had a small amount of fondant to the same mix as Sherry above.  Very easy to work with.

Ok, I think what I will do is use the white chocolate morsels, and try to add some Wilton Green Gel, but at the same time, I will also order the Chips from SweetWise, and I will use them as a backup plan. Thanks!!

Here is a tip.

With Easter coming J.D., keep an eye out afterwards for good quality white chocolate bunnies/figures on sale. I pick up several and put them in my freezer. I then can melt them for modeling/molding chocolate.

Remember that morsels will have a stablizer in them.  They do this so the chips don't completely melt in a cookie.  You may need to adjust the corn syrup.  

Chocolate is my favorite modeling medium.  I never use the chips. I buy the bakers' blocks of white (and dark) chocolate, then add in gel paste to color.  And like June said, by stocking  up after Easter - and Christmas - you can get some great sale prices. I very rarely ever pay more than $1 per (solid) pound.

Hi J.D.

I use Vanilla coating wafers, 4oz. with 2 tbs. of corn syrup. If you want more pliable modeling chocolate use a little more corn syrup, if you want less pliable use less corn syrup. I try to use wilbur white coating wafers if they are available. The melting process is key to making modeling chocolate, you need to slow heat on stove till melted or I use the microwave in 20 sec increments, stirring after each 20 sec. Once melted add your light corn syrup and stir. I then pour into a ziplock and refridgerate for a few hours. At that point you can add whatever color you choose to it, be sure to need it before you add color. i will let mine warm to room temperature before trying to mix in color.

Thanks everyone!! I will try these suggestions. I have ordered the Merken's Dark Green wafers as well as a lot more of the items I need, but I also have some white chocolate as my backup plan just in case. Hopefully everything will be here by this weekend which will give me only two weeks to knock this cake out. I will post pictures afterwards. I also ordered The Mat since it came highly recommended. One last thing I am a little worried about is that I am not sure if the Wilton Gel Colors are Oil or Water based. I know that if they are water based then they will not work right with Modeling Chocolate as I would assume this seizes the chocolate and causes it to crumble. I am hoping it is oil based, but I don't have any more time to play with here. Thanks again for all the help. You guys are awesome!!!

Thank you to everyone with all of the helpful suggestions!! The cake was a complete success, and got nothing but "Wow's" from everyone there. Most importantly, my Granddaughter was overwhelmed and completely speechless, which is truly amazing for a little 6 year old girl. :)
