Cake Decorating Community - Cakes We Bake

Hi there!  I just landed my first wedding cake and they'd like celtic knots and celtic hearts on it... in piped buttercream.  I just gave it a whirl to practice and feel completely defeated.  I've searched the web, and I don't see ANY that are all buttercream - any ideas out there?  They don't want any fondant or gumpaste on the cake at all... should I say no to the request, or should I buy maybe a silicone mold and try chocolate decorations?  I'd love to hear from you!

My suggestion would be as others have said. A mold. I would use merken's white chocolate candy melts. I have tried other chocolate, but merkens is superior. Melts well, takes colour & dries hard quickly. But one step further. Make modeling chcoolate. I made dark modeling chocolate and placed in the inexpensive plastic molds sold at my local bulk barn. Details came ut very well.   If you wanted to use buttercream, I would do half buttercream/half royal icing mixture for stability. Buttercream will freeze of course, but when reaches room temp, doesn't have much stability, that's where the royal icing comes in. I would try that in the mold and sit out on the counter for a day or 2 and see how it holds up compared to the palin melted chocolate/modeling chocolate.

Thank you so much, ladies, for your guidance! I bought the molds from global sugar art, and the plan so far is chocolate, but I've contacted that site for the butter clay as well! What a treat to be a little ahead of the mainstream on something for once! I hope it works out! Thank you again for rooting for me. That alone has improved my confidence over the last week. I received their contract & deposit in the mail today, so there's no going back now!

Hi Holly,  Please let us know how this works for you, I've had a similar requests (and was hoping they were going to change their minds!) on celtic knots, etc... and I'm kind of lost like you were.  I'm anxious to see how the moulds work out for you!  Good luck!! :)

Yes, I agree with Linda. It sure would be nice to see the product "in action" so to speak.  Then you know if it is something woethwhile adding to your caking inventory.

Well, ladies!  I've ordered a sample pack and am excited to try it out.  I don't think I've been around Cakeswebake long enough to know who Terri is, but I can always post a little video of my own fumblings and tastings of it if that doesn't work out. I ordered original, cheesecake, white chocolate amaretto, lemon, and almond. Cross your fingers!

I did a celtic wedding cake tied in with a Christian theme about a year ago.  I think I have a picture posted in my album on here... will see if I can find it and link it.  It was fondant and gumpaste though... I bought the RVO cutters...

I  have only done 1 Celtic wedding.  Fortunately for me- they were very ok with the Celtic Knots in any media I wanted to use(I chose gumpaste) . They also wanted a Claddah Ring used.  I found simply beautiful silicon molds at Global Sugar Arts.  The molds will create very 3D looking knots and they come in a huge variety of styles and sizes.  In your case, I would see if they would be willing to allow you to use chocolate (the Celtic Knot candy molds are also available at Global SA).  Good luck!
