i am after a red velvet cupcake recipe that if light fluffy and very moist using a vanilla box mix and maybe adding some cocoa powder and food colour i don't want a recipe where u add pudding to it if anyone had a recipe could u please share it with me thanks

Adding pudding makes the crumb denser ..

Red velvet does not have much cocoa powder in it. A couple of tablespoons added to a cake mix won't make any difference. Substitute 2 oz [4 tb] red dye for 2 oz liquid ..
Katie check out the Forums there is a very good red velvet cake recipe  it was post by Jeri.. I made it and it was great..!
I don't know about the recipe, but Lorann oils now sells a red velvet flavor that also has the red food color in it. I have used it and really like it, and it would be an alternative to using less cocoa, if that is what you are looking for. I used it in a regular Duncan Hines chocolate cake mix, added 1 cup buttermilk, one cup sour cream, 1 cup flour, 2 tablespoons cocoa, 1 cup sugar, 4 eggs to the entire mix, 1/2 cup oil, and I think I may have added 1/2 cup water and the flavor-about 1 tablespoon along with 2 tsp red food paste.
