Don’t throw out those cake scraps! These little treats, (sometimes referred to as “cake truffles” or “cake bon-bons” are so easy to make and are absolutely delicious! You can make these delightful cake balls using your leftover cake scraps, or even use an entire cake to make them!

Tools Needed:
•Decorating gloves
•Mixing Bowl with lid
•One cooled cake – any size and any flavor (or you can use all those left over scraps)
•One bottle liquid coffee creamer – any flavor complimentary to cake – or anything to use as a binder, Butter cream icing, etc.
•Melted Chocolate – amount varies with how many balls need to be dipped
•Parchment Paper lined tray/plate/platter

Place cooled cake or scraps into a bowl in large pieces Using a fork, crumble the cake into a nice crumb When it appears all the cake is crumbled use the fork, or your hands, and run thru it to make sure it’s all crumbled. Crumbled cake will be soft and fluffy Pour in liquid coffee creamer judging by eye, until a medium sized puddle forms, set aside for a moment Place chocolate to be melted in a microwave safe bowl, microwave following melting directions While chocolate is melting, put on decorators/food safe gloves and begin mixing the crumb liquid mixture. I use gloved hands because it’s easier to get the feel of the mixture for consistency reasons rather then using a fork or spoon but you can use a fork or spoon if you’d prefer. Mix and mash and smoosh until a soft mushy dough forms Once you get the mixture to the consistency you would like it, roll a small amount into a ball using the palms of your hands, or a cookie scoop, or a melon baler, anything will work for this. Place platter into the freezer for about 30-90 minutes After removing platter from freezer, take one ball at a time, and roll it around in the melted chocolate with the help of a spoon. Place dipped balls back onto the parchment paper lined tray for drying.
TIP: Store frozen – un-dipped – cake balls in an air tight container sealed with both lid and plastic wrap. Remove just before dipping to help the chocolate coating set. I serve them cold, but not frozen.

Well I made cake balls yesterday and I am not delighted with them. I added so little Buttercream icing to the crumbled cake, froze them then rolled them in chocolate with a bit of shortening added to it. When I went to taste one I just found it to mushy. The cake I use is really moist to start with so I will try them one more time...adding no Buttercream at all and see how that works.
Kathy I watched that video before I even started my cake balls....I do belive that my original cake recipe is already so moist. I will keep trying and maybe I will figure out what I am doing wrong.
Made them for the first time a week ago - family loved them. Especially since I added cherry flavoring and mint flavoring to two different chocolate batches. I have 3 gallon size bags of cake scraps in my freezer waiting for next week. I have a pot luck (church function) I'm going to be making them for. I think I'm going to make 3 of 4 different flavor combos.
I make a variation of this with my off-cuts but I use melted chocolate mixed in and just a light icing to coat. I mix equal weights of cake crumbs and chocolate and roll into balls and by the time I've done that the first ones are usually firm enough to coat. My absolute favourites are made with white chocolate and vanilla cake, coated with lemon icing and then I pipe a few lines over the top with more white chocolate to decorate.
Thanks everyone.. I will be trying all ways. I will do it again for I also have alot of cake scraps.
I am really going to try to mix some chocolate into the cake, if it firms it up I think I'd like them.
