Cake Decorating Community - Cakes We Bake

Here goes,

 

A bride would like the following cake:

 

3-tiers (24x24, 16" round and 16x16) STACKED!

 

The cake is expected to be covered in whipped topping...3 layers of cake (blackforest, cherry filling, red velvet, cream cheese frosting, black forest). The cake is to travel for about 2-hrs...:)

 

The idea is this...

the bottom tier will be served as dessert...200-250 guests. The top 2-tiers will be whisked away to the party that follows..

 

What alternatives can I propose to her to yield the same amount of cake...it's going to be  mess when the top 2-tiers are removed...

 

I was thinking of making a 3-tiered that can satisfy the party...and enough separately for dessert...

 

HELP!....:)

Oooooohh, what a mess this would be.  I would just tell her that you charge per serving.  That the price of a cake for each of the two events would be the same as one huge mongo cake.  And let her know that for a novice to try to remove and place in a suitable container the two huge top layers for the trip to the next party would be extremely difficult.  The top two layers will be really heavy and difficult to manage and look really messy for the next party.  Another thing you could mention is that if you did a separate one layer for dessert like you are proposing that each serving would look much better as the top icing would be undisturbed from the layer on top that had been removed.  By the way, how is she planning on cutting and serving a 3 layer cake?  Serving it 3 layers tall or a cake board between two of the layers so some servings would be 2 layers and some 1 layer?  Or maybe I am misunderstanding something.  Either way, this is your area of expertise and I would just let her know reasonable options you are willing to make for her.
Seeing as I've never made a cake that's paid for and I have NEVER made a cake with whipped topping, my opinion would not be very good, however, I will say, for sure the two cakes afterward for the party would be melted and yucky.  I would try to talk her out of the whipped topping or make separate ones and somehow decorate it there but maybe that's not possible.

I think your idea of a 3 tiered cake for the party and the dessert seperate is the way to go.... and be sure to charge per serving!  It will be a lot of work to make that much! 
That's the way I'm going Jeri....what is your base per serving cost...would love to see what that works out to be in J'can

That sounds like one hot mess.  I'm all for the idea of separate cakes.  BTW, our going rate in my area is about $3 per serving.

I am waiting to hear back from the "planning team" on what I proposed.

 

@ denette....I do not know how she plans on serving this cake...I gather that all 3 layers will be served... she will surely pay for the get up that she wants...that's a whole lot of cake...3 layers...black forest and red velvet...oh la laaa..

 

@Wendy...the bride tries to stay a way from things that are extremely sweet...hence whipped topping...as she said...something "light"...:)

 

I agree Deah...I'm not making that...wouldn't even make an attempt....and on top of that...the best man is to transport the cake from east to north...:)...I told them that I like to deliver my cakes in the case of damage control...cuz i don't want photographs of a messed up cake with my name all over it...:)...

US$3 is roughly JA$260...I was thinking of JA$300 per serving...:)

Hi guys:

 

How many servings should a 6", 9" and 12" cake yield? (3 layers as indicated in my e-mails)

 

And how many dessert servings should  a 2x12 yield ?

 

Btw. I got her to agree to this idea. I'm still working on the whipped topping.

Here is a serving chart.      http://www.wilton.com/cakes/making-cakes/baking-wedding-cake-2-inch...    To get your third layer, add on another half of the serving amount......two layers of a 6 inch cake serves 12, plus half of that for the third layer and you would get 18 servings.  I would keep all the servings the same size, regardless of if it is the stacked cake or the dessert cake.
