Having a blonde moment here, but do people really eat fondant or does it generally get left on the plate. I've tried several recipes and flavorings and it still is not as tasty as the decorations are beautiful.

Just curious if anyone has tried Sweet Inspirations from Cal Java also Fondx is has gourmet flavors coming out.I have made Jennifer Donz's recipe still chewy using the Merkens and it's pretty good.

I started out with Wilton Fondant several years ago... man I hated that stuff and still do. I can not say anything good about it at all! It was hard to work with....tasted like rubber and was just nasty.... Then I discovered Satin Ice.... I have some people who love it some who hate it but as long as I have the layer of buttercream under it.... all are happy! My buttercream is made with 100% real butter no shortning and people love it. If your buttercream tastes good or if you use ganache under it... no one minds the fondant. I made the black wedding cake in December and the DJ actually warned everyone ( because we asked him to) that if they ate the black fondant their mouth would turn black... well you just picture about 100 cowboys who are all around 24 years old who have had a bit too much whiskey.... needless to say they all had black teeth!

I would recommend Satin Ice it is easy to work with, mellow mild taste... and love the colors. And their chocolate tastes like tootsie rolls too! I have covered a lot of cakes in the dk chocolate and they turn out really nice. I buy the Ivory, Chocolate and White all in the 20 lb buckets.
Would you share your buttercream recipie? Also where can you get a 110% real butter?
I do not know about 110% real butter... I use 100% real butter..... which means I use all butter no shortning in my buttercream. I like the Tillamook Butter the best but also buy Kirkland butter at Costco sometimes. I use 1 pound of butter to 4 pounds of powdered sugar and then add fresh heavy cream to get the right consistancy that I like. If I am making fresh vanilla bean buttercream I scrape a couple vanilla beans and put them into the butter at the first before adding the ps. I keep it simple but people love it. Just butter, sugar and cream.

I was wondering about the Sweet Inspiration white chocolate flavor. I have made Jennifer Dontz's recipe for semi homade chocolate fondant. I wonder when the Elite Fondx flavors come out. What about the performance of the Fondx were you impressed?

Fondant is SWEEEEEET...sometimes toothachingly sweet. I hate marshmallows as a rule...but I like marshmallow fondant. I add up to a tablespoon of diluted saltwater sometimes to my batch of mmf, that helps to cut the sweetness some. For me its not so much about the taste as the texture..usually pretty chewy. As an interesting side note I saw these articles recently
