Cake Decorating Community - Cakes We Bake

It's been a few years since I've done it, but I'm planning to this year...

I have a bunch of favorite cookie recipes I make right at the beginning of December. I freeze the dough, wrap it up good, then begin the baking a few days before Christmas. I go nuts and do fudge and chocolate covered candies, too. My dining room table then gets covered with thousands, and I do mean thousands of cookies, and I make platters for people and give them out.

Most of the cookies aren't decorated in the "cake decorating" sense, but I thought it might be fun to exchange our favorite cookie recipes for the season. So, as I select what I'm making this year, I'll post the recipes. 

Just wanted to see if anyone else was interested in sharing their favorites.

I love this idea!! This is the first year that I will be baking for the holidays and I would love any help I can get!
Great idea, Terri! I need to think about what I want to share. I always tell my family I'm going to cut down on the number of varieties of cookies I'm going to do, but they each have their favorites and insist I have to at least make THOSE. So, yes, I end up with hundreds of cookies (not thousands - can I be your friend?? :) ) and we share with our friends as well. Every year my husband watches me load up the boxes and asks "Are there going to be enough for us?" and I ask him "How many dozen cookies do you need to eat?" LOL.
That's a really great idea and it is our project for CWB cake club as well. Terri, I have to make platters for my friends and family and yes like Elieen everybody has a favorite. I would love to have some recipes where I can start early and have a relatively stress free baking. This year my son got one of his favorites already (that means this item is cut off the baking for this year lol) which I posted on CWB, can I post it here too?
oops.......is this only for cookies?

Great Idea.

I would love to share few cookies recipes which I tried from the following site and most of them came out very well. I tried them before christmas so that I can be sure to make perfect cookies on Christmas.

I can share my recipes but you all will have to do the work this year!!! Surgery is next week and I have run out of time to make cookies this year. Boo Hoo... I LOVE making Christmas cookies. I used to do the same Terri... and my children would be my elves and deliver them. Loved making people smile. I now usually bake for all of our grown children and ship them a box of cookies but this year is out. Our daughters are coming to take care of me the week after my surgery and was thinking about getting them going on the cookies but I highly doubt that I will be up to making cookies the week that they will be here. Nothing says Christmas more than sharing with those you love!
Here is the recipe I use for my Sugar Cookies... it is a winner every time.
Here is the recipe I use for all my sugar cookies. I give credit where I got the recipe is from "Simply Better a Small Cookie Book" put out by Better Homes and Gardens I tweaked it for my own likings so this is NOT exactly the same as it is in the book

1 cup salted butter ( I only use REAL sweet cream butter)
3/4 cup sugar
1 egg
3 cups all purpose flour
A couple drops of Almond Extract (I use Wilton Almond... love it)

Preheat your oven to 300 degrees.

I cream the butter and the sugar together then add the egg and mix till well combined. Add just a couple drops of Almond Extract. Add one cup of flour and mix well. Add the second cup and mix well. Then I add a half cup and mix well then I add the remaining 1/2 cup a little at a time making sure the dough does not get too hard. If it looks like it is, don't add any more flour.

Divide the dough in half cover the bowl with a towel while you work with the other half. Roll out on a floured surface about 1/8" thick and cut your shapes. Try to not overwork the dough or the cookies are not as flaky. I roll mine with a soft hand. Meaning not to push real hard on the roller just quick soft motion.

Put your cookies 1" apart. You can cook on parchment if you want.
I use both the mini cutters and the regular size cutters. ALWAYS have the same size on the pan. Never bake big and little cookies together. They bake differently.
the regular size cookie cutter I bake for 11 minutes. The mini cutter size I bake for 7 minutes.

Icing
2 cups powdered sugar
2 TBSP milk
1 tsp Almond Extract (again I use Wilton)
Add the milk to the powdered sugar mixing well if you need the icing thinner, just add a tad bit more milk. I love to ice my cookies and dip them into sanding sugar.

These stay fresh for about a month as long as you store them in a cool sealed container. I have baked them and stored them for a month and are as soft as the day I made them. This recipe DOES NOT get hard ever. Unless you over bake them. I always bake ALL of my cookies at 300 for a longer time. Most cookies I bake at 300 for 16 minutes. If you are using the small cutters only bake them for 6 to 7 minutes. They bake much quicker. Hope you enjoy this recipe!
