Hi all! Apparently joined a while ago, but forgot! I am a hobby baker, but came today to seek advise. Some of you may have seen my question on Cake Central; I apologize for repetition.
I am transporting a wedding cake 10 hours by car. I need to fill, ganache and fondant on Wednesday. Travel on Thursday, decorate on Friday, wedding is Saturday afternoon.
Will a filling of SMBC with jam mixed in be OK for that time, or should I try an emulsion to flavor instead?
I can refrig Wed nite at home, and Thurs nite in hotel if that would be good, but the tiers will be in a AC car all day. After adding gumpaste flowers on Friday, it will need to sit out.
I appreciate any words of wisdom!
