Cake Decorating Community - Cakes We Bake

Help! I have to make a four tiered wedding cake and it has to be yellow, gluten free. Made the six " and no problem, moved on to the 8" followed the same step by step directions and the cakes fell. Any great recipes out there that will help? I'm at the point where I might just go boxed cake. Anyone have any luck with those? Can you tell I'm in panic mode? Help?

Sweet P can't use this recipe as it contains milk & eggs. Her daughter is vegan....no animal products,  plus the gluten issue.

I had a similar recipe, but you have to replace the eggs & milk, even with some, the baking powder as it is made using bone meal, a animal product. . Milk is easy...., use almond/rice milk,  the eggs and baking powder, usually vinegar and baking soda for lift. I have used soy based "sour cream" to replace the eggs.  

 Sweet P  .......  Below is the link my daughter sent me for the cake she uses. Only difference is she doesn't use earth balance for her icing, but organic palm shortening. She purchased that online. But I know vegans that use Crisco. It is acceptable, not a animal product.  Guessing you will be baking in N.Y.  Couldn't imagine you transporting a cake from Florida.

Good idea. Don't know if your daughter is a baker, but perhaps she could make this cake and see what she thinks of the taste & flavor?  Best of luck with the wedding and the cake. Oh, by the way, Lorann oils makes an amazing cheesecake flavoring.  That might fit the bill for daughters faux cheesecake cake request.  :o)
