Hi everyone, im back ( sort of !)
Ive missed you all! Hope you are all well.
Next monday, ive to 3 9" cakes to make,a batch of cupcakes and some cake pops ( hopefully )!!
I made over 100 flowers yesterday!
Ive taken on the offer to supply fresh cakes to a local cafe,another one ! Ive also got a farm shop interested too! ( Oh what have i started lol )
Things are still hard at the moment.Having good and bad days. I phoned a place for some help but ive got to wait 3 months as its apparently " too soon " !! But i can hear Grandad telling me to do this !! So, im trying to get on and do this. I want to make him proud.
The Christmas cake i made, was brilliant. Was so happy, the people said it was the best they had ever tasted, so thank you to all who helpt :-) Will put on a pic.
Anyone made cake pops ?!! Needing help !! Also need a good recipe for a chocolate cake. I made a Bakewell Cake the other day,that was rather good so dont know if i should do one of them?
Im doing do one of the cakes decorated for Valentines ( chocolate) and some of the cup cakes( piped roses etc ),cake pops with red hearts . The other cake, with sugarpaste flowers and one plain ish one. Does this sound ok ?

Lisa - you must be psychic! I was thinking of you only today and thought I really must message you to see how you are. Firstly let me say that you will never get over the loss of your Grandad, but it will get easier every day. My Dad passed 20 years ago now and I still miss him and think about him a lot and wish I could tell him things etc. But that's what happens when you lose someone you love. You're right, he would want you to get on and make a success of yourself, which it sounds like you are doing in bucketfuls! Congratulations on all your customers - awesome! One thing I must mention - if you are supplying cakeshops etc., do you have all the right Food Hygiene certs and approvals from your local council? If you are selling to the public and don't have these, you can get 'done'.
Now to business -
Cake pops - yes I have made them and what a mess I did get into! I think most people do though. Then I found this really good video tutorial on youtube. It covers the whole process and is really helpful -

I think the important thing is not to rush them.
Chocolate cake - there a quite a lot of recipes for that on this site. I have a really good Devils Food Cake recipe of the goddess herself, Mary Berry and I will put that up for you tomorrow.

Ive managed to put up a pic of him with me before i had leukaemia, about 2yrs old and im not getting upset looking at it. Im talking to him all the time LOL Feeling a little lost today. Nan died 20yrs ago so kind of bought all that back too. My Doctor didnt want to know when i went last week, he just wasnt interested, so i dont know who to talk to. Bf no good ! lol
I have got food hygiene certs and approval from local council. Ive been a busy little bunny ! Its just some days i can face doing normal things at the moment. I know that prob sounds silly.
Ive also spoke to my local cake supplier and they are happy to give me 20% discounts.
Ive bought some cup cake holders to put the rose cupcakes in, like the pictures of a plant pot ive seen.
Also bought a x50 pack of cake pop bags,sticks and ties for £3.65 I just need to get these cakes right if you know what i mean. A while ago, i made a " chocolate Torte" But not the one with a pastry base. It was beautiful. I thought of doing one of these but its a little expensive to make.
The only thing i haven got is a cake pop mould ? Do i really need one of these ?
I have been asking myself "Can i do this ???!!!"

No, you really don't need a cake pop mould. Just make a cake, break it up in your wonderful machine, mix in the butter icing, let it rest, then shape them. I suggest using some kind of measure (measuring spoon for example) to make sure your pops come out the same size. Also, when you put your sticks in, be sure to let them rest afterwards and chill, so the chocolate or icing, whatever your using to stick them in with can set properly. Do it too soon and the pops will more than likely fall off.

Morning Lisa. Here's the Devils Food Cake recipe for you -
50g cocoa
225ml water
100g soft margarine
275g caster sugar
2 eggs
175g plain flour
quarter teaspoon baking powder
1 tsp bicarb of soda
Pre heat oven to 180C/350F/Gas 4. Grease and line 2 x 8" sandwich tins with greased greaseproof paper
Whisk the cocoa into the water until smooth. Set aside. Place the margarine in a bowl and gradually whisk in the sugar until the mixture is pale and fluffy. Lightly whisk the eggs then gradually whisk into the creamed mixture until evenly blended.
Sift the flour with the baking powder and bicarbonate of soda and fold into the creamed mixture alternately with the cocoa and water.
Divide the mixture between the tins and level the surface. Bake in the preheated oven for about 30-35 mins or until well risen and firm to the touch.
Allow to cool in the tins for a few minutes then turn out and leave to cool completely on a wire rack.

Yes, you can definitely make it the day before or even more. Just wrap it in cling film when it's cold to keep it fresh. It's a very dense, moist cake and tastes yummy.

Just mentioned you to Katy the other day. I went into a great depression when I lost my Mom. That was 2003, & still miss her. She taught me how to bake & cook. Never saw any of my cake creations. She would have been amazed. Like Katy said, it never really goes away, pain gets less. But good memories remain.
Only tip I can give you, re: cake pops, get a small cheap warmer, like a small crock pot. Keeps the melted chocolate at even temp for dipping.

Thank you June, i guess i havent accepted it yet. I was the same as you, when nan went 20 odd yrs ago, i have never delt with that so this has bought all of that back too. Just feel so lost and feel like my safety has gone. Sorry if that doesnt make sense ! Ive no brothers or sisters so its just me an mum now. Thought about approaching the hospital ( as there was a lot of neglect while he was in there ) but it wont do any good.
Although some answers would make me feel better ! Guess ive a long way to go yet.
