Wow welcome Jan  you must be the person I need to talk to today... Hi from Australia.. I am in not so sunny Queensland at the moment...  I have been decorating as a hobby for 20 years now.. and just veturing out on my own.. mainly with toppers as I live in a  low economic area.  However I am wanting to make a cake for my aunt for her 60th Birthday and it would require me to freeze said cake and transport it.  My question to you is how on earth do I freeze and transport a  fondant covered cake??  lol    best wishes to you...  Helen :)

You CANNOT freeze a fondant covered cake. When it thaws, it goes all soft & gooey. Even the fondant made with white chocolate. You can freeze a buttercream cake, no problem.

I have never frozen a fondant covered cake but remember seeing something in a forum on another site.  I looked for it and found it.   Here is what the person said that they did :Box cake. Wrap box in 2 layers of saran wrap, 1 layer of foil. Put wrapped box in garbage bag. Place in freezer. 

24 hrs. before serving, place completely boxed & wrapped cake in refrigerator. Several hours before serving, place boxed & wrapped cake on counter to come to room temp. Immediately before display & serving, remove cake from wrapping & box. Eat cake.

I have heard about this before Goreti, but can't believe how great those cakes look. Guess  it is in all how it is wrapped!!!

thank you so much for that... she definately wants to try this.. hopefully it will make it half way across the country in one piece.  I'll let you know how it goes.. :) just have to find a transport company that will transport it.

 

Honestly!  These forums are the BOMB!  I am so excited to find this information on freezing fondant cakes.  Like you,  June, I thought that was a huge no-no.  So happy - going home to clean out my chest freezer so I can do a trial run!!!  Thanks everyone for being so willing to share all your knowledge with us!  (Can you tell I'm excited?  All the exclamation points??)  :)

Your'e so funny!!!  Didn't know our forums were the "BOMB"!!!!   I am going to pass this info on to my cake club as well. Saved this info to my fav's on my laptop.

Had to freeze my daughters fondant covered cake when she woke up sick on her birthday....froze for a week, put in fridge 2 days before rescheduled party, and left on the counter in front of a fan (to dry any condensation) before cutting it. If I hadn't been the one to do everything, I never would have known the difference! I didn't box or wrap it either, just stuck the whole thing in the freezer.

wow Joann  you were lucky..  my wedding cake was put in the fridge while I was off getting ready , some bright spark put it up the back of the fridge where the water trap is..  all the moisture collected around the royal icing on the board and made it all soft.I should have thought of the fan..lol     and you are right June this forum is  'The Bomb'.  :)
