I had tried the original cake recipe and did not care for the taste of it, so I used a devils food box mix, added 1-1/2 cups extra flour, 1-1/2 cups extra sugar, 1-1/2 cups sour cream, 5 eggs total, 1/2 cup oil, and 1-1/4 cup water. I also added 1/4 cup black cocoa, a tablespoon of Hershey's cocoa, and a tablespoon of dutch cocoa. The batter was almost black looking and tasted out of this world. I did also add another 1/2 tsp. baking soda along with. It made 3 very dense and beautiful thick layers of cake baked in 9" pans. For the filling, I used 3 cups of powdered sugar, 2 tsp. of espresso powder, a tbsp. of water, 2 tbsp. of cherry liquor, and a 1/2 cup of butter. Once filled between layers, I placed black cherries on top of the filling icing and then iced the entire cake with Swiss meringue butter cream since my client's husband is lactose intolerant. Decorated the rest with chocolate shavings and more black cherries.

Well, Anne, her husband said he loved it! I have no idea what it tasted like, other than just a tiny bit from the parchment mixed with a cherry and some of the icing.

Fair enough too Linda. Just the eggs is worth a load anyway. Nothing finer than real fresh eggs - my neighbour gave me some last summer from a friend of his that was 'farm sitting' and had more than he knew what to do with. They were absolutely wonderful and made the most delicious sponge.
Thank you Katy! Well, she is the one that keeps me in eggs, We have both been each others supplier of one thing or another through the years. I guess it really doesn't bug me with her. You know, I think everyone has one of those friends that you tend to bend the rule a bit,,,she is mine. We have been friends since we were 18 and we have been through thick and thin with each other so the love we have for each other goes pretty deep. We each know each other so thoroughly with no secrets and we still put up with each other. ha ha!
haha - ninny! great word Goreti and very apt. I always carry my cake boxes like they're made of Venetian glass, terrified of squidging what's inside. And Gail's right 80 bucks for 2 cakes? Wow, you are a bargain Linda.
