I hosted Kaysie Lackey of The Peoples Cake at my cooking school for her Higgins the Butler Cake. This was my creation. If you have the chance to take a class with her, Kaysie is an excellent sugar artist and instructor. This is mostly modeling chocolate and a bit of fondant and gum paste.
