Cake Decorating Community - Cakes We Bake

This is the recipe shared by Gali and Goreti, except I used my own Pineapple Upside Down Cake recipe. I made the version featured in the original recipe, but it was inedible....don't know what went wrong. This is for my neighbor's picnic today. Will let you know how it tastes.

Oh, I loved the cheesecake portion of the cake just as it was written and I've NEVER used cornstarch in a cheesecake before.  It was so light and airy, even with two pounds of cream cheese.  I undoubtedly did something wrong with the pineapple upside cake.  I will scrutinize the recipe again to see if I can figure it out.  My old recipe worked fine with the cheesecake, though.

That is so weird Sandra.  It really is delicious that is why I decided to share it with everyone.  Even someone who said they said they didn't like cheesecake decided to try it because of everyone else's reaction. They then told my husband (this was the one I made for him to take to work) that they had never eaten a cheesecake like that.

It was a big hit and all was eaten.  Mike and I like it too, a keeper for sure.  Goreti, I don't know what was wrong unless it was the melted butter in the batter.  I cooked it for about 50 minutes, then removed it only to discover that it was still raw in the middle.  I cooked it for 20 more minutes and it finally got done.  While it was cooking, what appeared to be melted butter kept running over the sides of the pan and dripping all over the bottom of the stove.  I was using parchment paper, which contained the batter.  When I turned the cake out of the pan, for one thing it was stuck, which is a first for pineapple upside down cake.  The pineapple rings and most of the cherries were not even visible...don't know where they went - lol.  This morning I tried a piece just to see how it tastes and it was almost impossible to cut - a tough cake, can you imagine?!  It appeared to have separated into weird layers and tasted just awful.  I had everything at room temperature, so I haven't a clue.  It was a lot thinner batter than what I usually have, too.  Don't feel bad at all.  I love the recipe and it is just as easy to use my old recipe for the top portion.

Feel so badly that the recipe didn't work for you.  What was wrong with it?   I would love a slice of this right now.  I love the cheesecake portion too.
