Just read a recipe somewhere that says use 30-40% cocoa solids for ganache.  Who knew? lol

Interesting - didn't know the cocoa content made a difference.  I always use a high pc too - what did you use for this?

Yes it did don't know what I did right this time, only found out been using to higher cocco % before & this time add some caster sugar ! went on like a dream
