Thank you, Pearse! I'm flattered! I have only been doing cakes for about 2 years and I'm mostly self-taught.  Took a few beginner classes, but that's about it.  I do it for fun!

Pearse - I did a double batch - so about 6 cups of icing, but I had some left over.  It's a 9" round cake. I usually do a crumb coat first, chill it, smooth it, then do a second thicker coat and run the comb through that.

Patti - that frosting is really easy - the sides I did with an icing comb.  The bottom border is a simple star done with a 1M tip, and the top is a tip 21 done in a continuous circle swirl. :)  You'll do great! Can't wait to see the pictures.

THANK YOU SO MUCH! My doctor and coworkers are going to love this. The party is June 11th and I will post a picture and let you know how I do.  I might even have to make a practice cake before the party to practice my piping...I am not very good.  I have never had any classes just jumping in sometimes over my head...LOL

Hi Patty - Thanks for the compliment!!

 

The filling is a layer of mascarpone cheese filling (8 oz. mascarpone cheese, 1 cup heavy cream, 1/4 cup plus 2 Tbsp. powdered sugar and 1/2 tsp. vanilla whipped together to soft peaks - let set for at least 4 hours before using), topped with strawberry jam.  There are only two cake layers.  The frosting is straight-up vanilla buttercream. :)

I have to make a birthday cake for our doctor at work and I was thinking about making a WASC cake with strawberries.  I was looking for inspiration and wow did I find it...your cake is beautiful.  Can you please tell me about the filling and frosting?  Is the Mascarpone cheese and strawberry jam mixed together?  What kind of frosting?  Thanks for your help and inspiration.
