Yes, isomalt is a sugar free substitute for sugar.  Lasts in humidity and won't melt until extreme conditions.  It is in sugar free candy.  It pours, sculpts, and makes beautiful blown sugar. There are a few isomalt You Tube tutorials on my website at www.simicakes.com if you look on the tutorials page and tips and tricks of using it on the bottom of that same page.
