Made for my sons surprise 30th birthday party tonight. So hard making a cake when someone is living in your house!!! Constantly trooping upstairs to hide in my bedroom closet!!! Would have managed this without my hubby’s help. Certainly was a learning experience that’s for sure. Thanks to Nancy on here for her skate cake and advice she gave me. Don’t think I’ll make one again for a long time!!
Cake is a orange Creamsicle with orange icing. No fondant covering…as my son doesn’t care for it….another challenge as I’m not the best bc smoother. Rather than putting skate on top of cake, chose to put on a pond /rink. Son played at a pond near our house constantly…so thought he would appreciate the gesture. Added fondant snowballs & crushed fondant on top and sides for snow. Would have made a hockey stick & puck….but ran out of time. I hope my son gets a kick out of this…. : o)

Ok Katy.... I've made micro peanut brittle a billion times...well, Ok, maybe only a million. One of the first candies I ever made with my first micro, 25 yrs ago or so. So I knew it would work for the ice.
1/2 cup white/clear corn syrup. If you use regular corn syrup, it's yellow, you won't get a pale colour, like my blue. The yellow in regular corn syrup would have made it green. But if your going dark, no matter.
1 cup sugar. Place in a 4 cup glass bowl or measuring cup. It will bubble up considerably. Add your food colouring in the mixture at this point. Cook on high, my micro's 1000 watts. Stir after 1 min to incorporate colour. Use a metal spoon...plastic will melt...it's very hot. Continue to cook 2-3 min longer. Watch carefully, as it will burn. You won't need more than 3 min cooking time. Basically, you just want the sugar to melt into syrup, no granules left. Remove from micro..pour onto metal cooking baking pan. I was going to break it up, so it didn't matter what shape it took. But had I wanted a perfect circle, would have poured into a round cake pan. Those old fashioned metal ice cube trays would be ideal to use to make ice. Should scour the thrift shops and look for some.

It was Soooo easy Gail. I saw a cake with chards of blue ice on the sides of the cake. And I thought...hmmm, that would be cool to try. It's the same as making peanut brittle in the micro, except you skip adding the peanuts & baking soda. Took 3 min to make.....then poured on a baking sheet.... Wa La....instant ice...
