Good gracious, Bonnie!  Maybe it is(are) your oven(s) if they are not coming out like they used to.  Wouldn't have thought of that. Guess you'll just have to keep Mike :o)

Who do you think taught Mike how to do it?? ME!  I blame it on my oven.  Both of them... lol  Larry keeps wanting to know why I can't make them now, when I didn't used to have any problems with them!   I would like to know the same thing!!

Thank you Maria and Bonnie!  Bonnie, are you using super-ripe bananas?  They need to be deep yellow with black spots all over them.  That is the stage at which the flavor is most intense.  Also the best for banana pudding and Hummingbird Cake.  (Has anyone noticed that I love bananas - LOL! )

Banana bread is #1 in my house.  The only cake Larry will eat.  My mom made the best Banana Bread, yummm!  Her mom tooooo!!  My son 's tastes just like theirs!  Why, oh why, did it pass me by??? ...sobbing here.   This looks perfect too!

Thanks, Inoka!  It is very good, simple and not too sweet.  I am the same Gali, love good fruit cake, but my favorite is anything spicy - cinnamon, cloves, nutmeg, allspice, cardamom - also peppermint, and wintergreen.  That being said, I do like chocolate, just not as much as some other flavors.
