This is another of the Devonshire Apple Cakes that I make. This time I wanted to see if it would work as a proper cake, rather than theusual traybake style. Makes for a deeper cake and you can get a thicker layer of apple in the middle. I also made an apple syrup from the peelings boiled in a little water for a few minutes, strained and boiled rapidly with some sugar. This I poured over the cake when it was still warm so it would soak in and give the top a nice glaze. Seems to have worked OK, but sadly I won't get to eat any of this one. Made for a neighbour that makes his own bread from homemade yeast culture. We agreed he would bake me a loaf and I would bake him a cake!

Thanks Betty, it does seem to be a very popular cake. I offered my neighbour any kind of cake he liked and gave him a few suggestions. He chose apple. Certainly one of Mick's favourites - especially if it's warm and smothered in cream!
