Cake Decorating Community - Cakes We Bake

HELP! I am still practicing baking cakes and frosting them before I go on to fondant/decorating. The last two times I frosted the cake I kept getting crumbs in it...how do you avoid this?

Hi Erica - it's very simple.  First - wrap well and chill your cakes overnight in the fridge before you ice them.  They will be moister and less "crumby".  Second, after you fill the cake, thin your frosting down so it goes on really easily, then put a thin "crumb coat" of icing on your cake.  Then chill it for about 30 minutes.  This will seal in all the crumbs!  You then put the second coat of icing on, chill that for another 30 minutes then smooth the frosting with a Viva paper towel. This gives you a super-smooth finish.  You should try to get it as smooth as possible before chilling it each time, but the paper towels (Viva is the only one with no pattern) really do the trick to make it super smooth.  There are a couple video tutorials on here that show how to do that method.  Hope this helps!!
