Cake Decorating Community - Cakes We Bake

We are about to open our first shop and have to choose which mixers to buy (we are a kosher business so we need to get two).  We were wondering if any of you lovely bakers have experience and can give us advice with our problem...

We are two small women and don't intend to have any staff at the beginning.  We currently make batch after batch of cake batter in our kitchenaid because it doesn't hold very much.  We need to choose whether to buy a 10 quart or 20 quart mixer.  The size of the 20 quart is appealing (we could just make one big batch of whatever we are baking) but we are worried that it will be difficult to lift and pour the big bowl.  If we are spending so much money we don't want to buy the smaller one and then discover soon that we still have to make multiple batches.

So, our question is, have any of you used 10 and 20 quart mixers and do you think that small women could handle using the big one every day?

i did work in a bakery dep ! i think your best buy the 20quart , but it duz take 2 to lift and pour it you can also purch a large scoop ! , i used both 10 & 20 , the 10 you can lift yourself ! , good luck ; )gali

I would suggest the larger option. Just have it installed as close to your work surface as possible. You could always use a ladle and scoop your mixture out int the pans/ baking trays you are using, until it is light enough to handle. Good luck with your new shop!
