Are there no other kiwi confectioners out there wanting to join and share information on what it's like to make and decorate cakes in NZ?!!

Hi Suzie , thanks for letting me know about the kiwi cakers group. I know what you mean about not always having the same resources as some of the overseas sites. Your photos are fab! Take care

To the best of my knowledge, it is not available in NZ, it is super easy to make, as only 2 ingredients corn syrup & chocolate. I've made it heaps of times. If you want, I can email you the recipe I use.

Thanks Sandra I'd appreciate that. How do you find it to work with? Does it dry out like gumpaste or fondant and do you basically use it like clay and mold and carve it?

it's trickier to use than fondant, it dries quite hard (it's only chocolate & corn syrup), if you overwork it, it gets really sticky, in which case, I just put that bit down and pick up another bit. Here is a link to a cake I did I used it for the ribbon roses.

I also have used white to chocolate to do the exact same thing

That style of cake is one of my quick fall back cakes.

Could you please give me your email, so I can send through the recipe.

Hi girls! I spent 12 years in NZ making cakes, and was a member of the Hamilton cake club. Left about a year ago, but still have lots of contacts there, and am still an avid trademe buyer, especially of cake decorating stuff!!

Hi Ingrid Welcome!. I am sure you used to buy things from me on Trademe (kiwicakes/bejewelled). Where are you now?
