well, my fren's bday is coming up n he has had a ruff month so i'm baking some cupcakes as a suprise for him..then my cousin teaches at a kindergarten n dey suppose to have a fair coming up in sept/oct so i'm planning to maximise that for advertisement so i'll be practicising n practising till then n living on this website for tips n techniques :).whats up for u? (i think dey soon run us unto personal message with this back n forwarding..lmao)

Crisco is shortening so it works really good for the buttercream recipe. If you can find a no-name shortening, that has the transfat, that would be considered a hi-ratio shortening. Using crisco in your shortening will definitely help your cakes stand up to heat in the caribbean, but just be careful with the combination - it can dry really hard and start to crack! What I do is if I'm doing a cake, I do half butter, half crisco or 3/4 crisco, 1/4 butter - depending on the time of day the people need the cake for and whether or not they will be able to keep the cake in the fridge. For cupcakes I use 3/4 butter, 1/4 crisco..there is nothing worse than eating a cupcake with rock hard icing!

Half and half is cream...you should be able to find it in the milk section - it comes in a carton. Most people use it for coffee etc. If you can't find it I think if you use full cream or heavy whipping cream you should be fine.

Good luck both of you with your upcoming projects :). Don't forget to post pics - I try to post new pics every week if possible so everyone can enjoy my progress with me ;).

This weekend I'm doing a jazz cake and making an old fashioned microphone out of rice krispie treats (fingers crossed it works out good!).

Next weekend I'm doing two cakes - a sex in the city cake for a friend's birthday and a Jordan shoe box cake (basketball shoe box) with a basketball for my husband's birthday. So I'm excited about the upcoming stuff :)

thanks faith...n i agree with teneisha with time we will get constant orders...as my mother keeps reminding me, i've only been in this thing for a month..lol

I officially launched my cake business in late April, and have slowly been doing marketing via e-mail subscription lists, and have also be facebooking every cake moment I can! LOL. It has been slow but steady - some weeks I have nothing and other weeks I have to turn away orders. This morning had someone call me at 7am wanting a cake for 3pm today! I know I still have a LONG way to go, but am so grateful for the small victories.

I would like to officially welcome Deidre to the group! Deidre, please feel free to share your expertise, recipes, cake stories etc. with the group. I think you will find us to to be a very warm and friendly group of cakers (and why wouldn't we be when we all hail from the sunny shores of our respective Caribbean islands ;)!.
